The baguette is so versatile: Breakfast with butter and jam, lunch for a sandwich, dinner with cheese, this is the only bread you'll ever need... well...one of them anyway!
This course will teach you all the basics you need to know about bread dough so it can be applied to a multitude of different recipes (country bread, sourdough loaf...) as well as show you the traditional method of shaping and baking baguettes.
You will leave with your own baguettes and some levain (sourdough starter) to take home, and of course, the knowledge and confidence to replicate what you've learned at home!

This lesson will see you make a range of breads including using a yeast starter that gives sourdough tones to your bread and by the end of the day you will have mastered hand crafted loaves, focaccia and enriched sweet treats. Understanding Gluten and how to keep you bread consistent is a big focus
This spring, squash’s resident baker, julie filain is running monthly sourdough bread-making workshops where we will make our very own sourdough focaccia!
The working bakery, where the classes will take place, is fully equipped and has a range of professional bread ovens.
It is a hands on course and throughout the day you will be making a wheat sourdough and a rye sourdough and will be taking one home in a banneton to bake the next day. You will also be taking home our wheat and rye starters to use at home and full recipe sheets.
