Slow, low-temperature baking gives the meringue its crisp exterior and marshmallowy soft center. The dessert’s sweetness is offset by the cool, creamy topping and tangy tartness from the fruit. And the decorating is half the fun!
Instructor Sasha Crehan will start the class with meringue making basics, helping you build the skill set needed to turn out exceptional pavlovas every time: separating and beating eggs properly, forming and piping shapes, and tips for baking success.
Then we will turn our meringue into showstopper pavlovas of various shape and size: Classic or Mini Pavlovas topped with lemon or passionfruit curd, whipped cream and fresh fruits are hard to beat, but we’ll give them a run for their money with Rolled Pavlova, an ethereal spiral filled with fluffy cream and local spring strawberries!
The session will conclude with sampling our sweet creations together, with plenty to take home, too.
