In this class Rosario Caputo from Cibo Bistro will take us through Southern Italian pasta, teaching orecchiette, meaning little ear, this shape is designed to cup your sauce and is found in the region of Puglia.
Also from Puglia we will be making cavatelli, this a short oval shape with grooves to hold onto the flavours of your preferred sauces. We will also make two seasonal sauces to go with the pastas.
This course fee includes dinner and an extensive recipe pack.
At Awn Kitchen we focus on sourcing local, sustainable, and seasonal ingredients. Our classes and workshops teach foundational cooking and baking skills and are driven by a passion for sharing the stories of Alberta’s farmers.
A recipe is only as good as the ingredients, so in our workshops we hope to build technique and educate students on the importance of knowing and understanding how ingredients make it into our kitchen – what better place to start than with the farmer!
Classes are hands-on and questions are always encouraged. An extensive recipe pack is included with all courses which includes a detailed list of where ingredients can be sourced.

The kitchen seats 10 people and most of our 3-hour adult cooking classes are demonstration style, so you can sit back, relax, learn, sample, and enjoy your wine. On the weekend we offer more hands-on workshops making pasta and more.
