This course will be conducted in a fun & relaxed manner.
Callaghan has worked in some of the finest restaurants around the world, including as Head Pastry Chef at Sergio Arola’s double Michelin starred “Gastro” in Madrid, as well helping launch “Central” in Peru – currently rated the fifth best restaurant in the world.
Callaghan will give you the opportunity to learn some elegant French classics, such as the macaroon! With his tried and tested recipes that he’s accumulated on his travels, you’ll be the envy of all your friends.
Some pastry experience would be an advantage but not essential. The only part we’re confirming for now will be the macaroon, in different flavours and with various fillings. The rest will be left as a surprise on the day!

In each class, we’ll focus on key techniques used in advanced patisserie. . On our Patisserie day, you will learn how to make the patisserie classic Paris Brest. This will involve making of a choux pastry, filled with a caramel and coffee flavoured crème diplomat and finished with a coffee glaz...
We teach you all the skills you will need to make these tasty french delicacies at home.
Developed by Born Baker, Live French Macarons | French Technique teaches how to make delicious French macarons, fresh buttercream, and chocolate ganache. You’ll also learn how to properly color macarons. At the end of your class, you get to keep your recipes and share macarons at home
Working and learning my trade with the Roux Brothers at their pastry kitchen In Wandsworth and throughout their restaurants, my love of fabulous baking has stayed with me! On this course we will produce beautiful cakes and pastries and demystify a lot of techniques!
As the day comes to a close, you’ll have the opportunity to savour all recipes covered during the class with a glass of wine, before taking home all four desserts to share (or not!)
