If you’ve got a home pizza oven, you’re thinking of buying one or looking into starting a pizza business, this course could be perfect for you. It would also make a great gift for the aspiring pizza maker in your life. Join David Finn, founder and owner of Sherwood Fired, as you delve into the world of pizza making.

David’s knowledge base has been built up over 6 years running his own successful pizza company, developing and refining his skills as a master pizzaiolo. Before setting up his business David, a chef at the time, also did a pizza making course at The School.

This hands-on course will give you chance to learn how to make 3 different styles of pizza, Neapolitan, thin Roman ‘Tonda’ and Calzone pizzas, using high and low hydration dough, at varying temperatures.

 

Topics will include:

  • Ingredient selection
  • Dough making
  • Dough storage
  • Stretching techniques
  • Launching, turning and removing
  • Workflow
  • Recommended equipment

 

The focus will be on getting outside and using the ovens. The doughs you will hand stretch and shape before baking, will be prepared in advance for you. All recipes and tips for making the doughs are included in the course.

The course will also include a mixing demonstration by tutor David Finn to showcase different mixing techniques and processes.

  • David Finn attempted a corporate office job for a few years on completion of his Management Degree, before realising his true passion for food was worth pursuing. David trained and worked as a chef for 7 years, before converting a transit van into a mobile pizza business, Sherwood Fired. In 2016, David attended both the Food Business Start-up course and the Wood Fired Pizza Making course as part of his journey into setting up Sherwood Fired, both of which proved invaluable and allowed David’s business to grow and develop into the thriving business it is today. David has remained a constant supporter of The School of Artisan Food, sharing his knowledge, and pizzas, with the full-time students, and is now returning as a tutor to pass on the knowledge and skills to those wishing to learn the art of creating their own wood-fired pizzas. David’s experience, knowledge, and passion will make you want to start making your very own pizza, as soon as you get home
