About the Bakery

  • Black Island Bakery is a neighbourhood enterprise, focused on sharing knowledge and real bread. Our commitment to bringing you high quality bread starts with fine ingredients. Our grains and flour are organic and our main supplier is Oak Manor in Ontario.
  • The core of our enterprise is sourdough. Not only is modern sourdough baking an ancient art, but it allows the full expression of grain and local terroir, with significant health benefits associated with sourdough’s long fermentation. We also use baker’s yeast where called for, and sometimes combine the traditional process of sourdough with the modern technology of yeast for superb eating experiences.
  • Black Island Bakery is the result of the Frayne family living in various countries in Africa where good bread was sometimes hard to get. Bruce started baking for the family, which is how it all started.
  • Black Island Bakery is a member of the Real Bread Campaign, with a mission to find and share ways to make bread better for us, better for our communities and better for the planet.
  • We offer in-person workshops and bake bread for our community, including our summer produce market at the Beechwood Park Homes Association in Waterloo.

Baking With Wholegrains Workshop

You will learn to use wholegrains to make deep-flavoured and healthy bread worth eating. You will grind your own whole wheat and spelt flours at the workshop and use these to bake bread that you can easily achieve in your own kitchen at home.
