Join the family for a fun afternoon at our Italian style farmhouse kitchen for a cooking class. Classes are run by myself, along with my mamma (aka nonna) who owned one of the very first restaurants in Northbridge when they migrated to Australia from Italy. They also owned & ran other very successful restaurants throughout their career.
Home cooking is a huge part of our culture and Sunday family lunch with home made pasta was and still is a ritual. Classes are hands on & run for approximately 2 hours with up to 12 students, and are designed to feel like a typical Italian family gathering. You will enjoy an aperitivo including a glass of Italian vino bianco, an apron, take what you make, & taste your cooking in class.
Eggs used for our classes are fresh from our very own chickens and spinach for the Ravioli is grown by my papa` in our garden using no nasties. We choose to focus on one dish in class so it is relaxing rather than hectic & students are more likely to make the dish again at home because we keep it simple. Sauces vary depending on the season.
Learn how to make traditional fresh pasta from scratch. We will teach you how to create different shapes of pasta such as tagliatelle (using a pasta machine and hand-cut), farfalle and ravioli. We will taste each pasta with matching sauces accompanied by a glass of wine.
Pasta Rustica (Rustic Pasta) Masterclass There are so many amazing pasta dishes that we thought we would introduce a second pasta class to showcase a few more. In this case we will show you how to make Pasta e Fagioli, Maltagliati e Cavolfiore and Ravioli di Carne (meat- filled ravioli).
Enjoy the simple intricacies in hand rolling perfect orecchiette, tagliatelle and pappardelle where your only tool is a simple rolling pin – the way nonna would have done it!
Although dried pasta is cheap and readily available, there is nothing like fresh homemade pasta. If you have never attempted making fresh pasta before, this is the class for you!
In this class you will learn how to make tortelloni with one of the most decadent fillings: the simple and delicious combination of slowly roasted spinach and ricotta. Also, we will make the delicate EGG YOLK ravioli (uovo in raviolo) using the same filling.
