Course layout
The program is broken down into three components, as follows:
Hot Kitchen Component – 9 months
The student receives training on-site in all theoretical and practical hot kitchen modules as well as formal training on:
First Aid Level 1
Introduction to Fire Fighting
Chemical Training
Introduction to wine
SARS Workshop
Patisserie Component – 9 months
The student receives on-site training in all theoretical and practical patisserie modules as well as all managerial outcomes. 2 week wedding cake decorating skills training included in syllabus
Workplace Integrated Learning Component – 18 months
Students are placed nationally and internationally at renowned establishments where they will gain invaluable experience under the guidance of professional chefs.
Upon successful completion of this component, the learner will be able to apply for and take the national trade test at any registered QCTO Trade Test Centre in the country (estimated cost payable to the trade test centre of choice is around R17 000.00).

The Food & Beverage Institute Bloemfontein (FBI), now a national brand, was formed in 2004 / 5 by chefs Kevin Gericke and Lesley Jacobs, both internationally acclaimed in their respective fields.
As an approved City Guilds training and examination centre, (centre number 8******) and accredited QCTO skills development provider (SDP1221/18/00315), the FBI has trained many students who have exceled and are now running their own kitchens and food and beverage outlets both nationally and abroad.

Professional Cookery has been developed for professionals in the food preparation industry (hospitality). It brings together elements of food and drink preparation as well as supervision.
This course allows you to have a holistic knowledge that any aspiring chef would need.
During the first year programme which is the 8065-03 Food Preparation and Cooking (Patisserie), we teach the most basic skills which amongst others include Cooking Methods, Stocks and Sauces, nutrition and more.
This course is a foundation into the culinary world with a major emphasis on practical cookery. Other components of these courses include catering theory, food costing and menu planning.
