Course Details

This course is designed to provide individuals that handle open food the essential knowledge and understanding of good Food Safety Practice. The aim of this training course is to provide candidates with a fundamental knowledge of food hygiene and to enable them to apply this knowledge to essential practical skills in order to prevent food poisoning.

This course will describe how to safely prepare and serve food, how to keep food and kitchen & dining areas clean, as well as how to avoid the spread of disease. 

The course level does not reflect any RQF equivalent qualification standards; they only indicate the type of course so that organisations can choose whom it is suitable for.

  • Understand the importance of personal hygiene in relation to food preparation
  • Understand the importance of organised cleanliness and waste

Course overview

Here’s what we’ll be covering in each lesson (each lesson is a maximum of 5 mins long, making it easy to quickly make fantastic progress, even if you only have a small amount of time each day).

 

Lesson 01 - Introduction to Food Safety

  • The course kicks off here with what happens when food safety goes wrong
  • Looks at some common food hazards,
  • Where your responsibility for food safety lies and
  • What food poisoning looks like and who is most at risk

 

Lesson 02 - Personal Hygiene

  • Lesson 2 begins cleanliness
  • It moves on to look at reporting illnesses and wounds
  • Then finishes off with a look at clothing, what’s a help and a hindrance

 

Lesson 03 - Cleaning

  • Lesson 3 begins with how cleaning keeps food safe
  • The importance of following instructions
  • The significance of cleaning schedules, waste storage & disposal and pest control

 

Lesson 04 - Contamination

  • Lesson 4 begins with how food can become contaminated
  • It goes on to look at how food should be handled to prevent contamination and the E. Coli guidelines
  • It finishes with a look at the importance of time, temperature, storage and stock rotation in food safety

 

Lesson 05 - Food Poisoning Prevention

  • Lesson 5 begins with explaining the importance of hand hygiene
  • It demonstrates the need for separate chopping boards, rapid cooling of leftovers and emphasise the need to respect use-by dates

 

Final Test

Complete the final test to prove your knowledge.
