In this course students will learn how to identify and control food hazards, prevent contamination of food that may lead to food borne illnesses and accurately report on food contamination incidents and hygiene hazards.
This course covers safe egg handling, allergen management, cleaning and sanitising required modules and also includes the new Official NSW Food Authority COVID-19 Food Safety Supervisor Training Module.
The unit applies to all organisations with permanent or temporary kitchen premises or smaller food preparation or bar areas. It applies to food handlers who directly handle food or food contact surfaces such as cutlery, plates, and bowls during the course of their daily work activities.
This includes cooks, chefs, caterers, kitchen stewards, kitchen hands, bar, and food and beverage attendants, and sometimes room attendants and front office staff.
The NSW hospitality and retail food service sector requires certain food businesses in to have at least one trained Food Safety Supervision (FSS). The Food Act 2003 (NSW).

We offer  face to face food safety supervisor courses.  Our courses include industry specific content and are designed with the needs of our students in mind.
Food Safety Assessment, developed as a tool for the assessment of food safety outcomes and risk management, and determination of assessment frequency in a uniform and consistent manner.
Participants will gain the skills and knowledge required to apply good food hygiene practices within the hospitality and retail sectors.
There are changes (of course) to food safety culture, food defence, outsourced processing, equipment installation (lots) aind a new section on animal processing. And as expected a mandatory unannounced audit every 3 years.
HACCP Awareness course is offered by JLB. Our instructors are certified auditors with a wealth of experience in the industry and a hands-on approach to teaching and learning.Â
