Course Details

This programme aims to upskill employees who are currently employed in a food preparation and handling role. The learner will:

  • Understand the importance of maintaining good personal health and hygiene at all times.

  • Understand the importance of a professional appearance when dealing with customers and the way in which this enhances the image of the company.

  • Maintain and promote food hygiene and safety procedures during food preparation, cooking and storage according to organisational requirements.

 

Learning Outcomes:

At the end of this skills programme and the completion of a portfolio of evidence, the learner will be able to:

  • Explain the reasons and importance for complying with legislative and organisational policy with regards to personal hygiene and professional appearance. Maintain a safe and secure working environment

  • Explain organisational procedures to be followed when a person is suffering an illness.

  • Explain the health and safety procedures to be followed when storing food.

  • Describe the main contamination threats when storing food.

  • Describe the checks that should be carried out upon delivery to ensure that food items are in a good hygienic condition.

  • Describe methods to prevent cross contamination.

  • Describe the correct procedures for defrosting food items and explain the impact of following incorrect procedures.

  • The importance of following health and safety procedures when lifting and storing food deliveries is explained.

  • Maintain high standards of personal hygiene in accordance with organisational requirements.

  • Dispose waste in accordance with hygiene standards and organisational requirements.

 

Minimum Entry Requirement

  • Grade 10

 

Recognition:

Capital Hotel School awards a Certificate of Attendance for completion of the following unit standards.

This programme can be taken in conjunction with an accredited skills programme in order to receive an accredited CATHSSETA certificate.
