Course Details

The class covers the essential techniques of brewing espresso, steaming milk and maintaining an espresso bar. The class offers theoretical knowledge of history, cultivation, processing and roasting as well as practical understanding of concepts such as crema, microfoam, and daily maintenance.

Students take part in an espresso tasting to learn the qualities of a good and bad espresso. To truly prepare baristas for a café setting, the instructor will break down and demonstrate 10 different specialty coffee beverages that form the base of all café menus.

  • Coffee origins: history and spread of coffee throughout the world

  • Coffee botany: how the plant, the fruit, and the processing methods affect the flavour profile

  • Tailoring a recipe: understand how the balance of Arabica and Robusta and the roast level of a bean changes extraction and flavour

  • Learning the different parts and functions of a commercial espresso machine

  • Barista technique: extracting the perfect espresso

  • Tasting technique: the espresso visual, olfactory and gustatory features

  • Maintenance: how to clean and care for espresso equipment to get consistent results
