This specialist course explores the concept of balancing life’s pressures and stressors with positive mindful baking activity, to create a therapeutic experience.

This one-day course adopts baking to demonstrate how activity can be relaxing, mindful, a coping mechanism and a strategy for maintaining an equilibrium.

The course has been specifically developed by Ian Waterland who worked for many years as a mental health professional. The course is ideal for those wishing to explore the subject of therapeutic baking for themselves and for those planning to support others with therapeutic baking.

Participants will explore the “5 Ways to Wellbeing” and learn to plan how to incorporate this approach into everyday life.

A range of other concepts and theories supporting positive mental health combine with hands on baking, with each participant taking home teacakes they have baked during the day.

Ian is a qualified teacher who worked for many years as a mental health professional and gained a BA (Hons) in Mental Health Practice in 2013. Alongside his invaluable experience, Ian graduated from the Advanced Diploma course at The School of Artisan Food in 2014, establishing a successful micro-bakery shortly after. He now bakes, teaches bakers and therapeutic baking, in a wide variety of settings. Ian became an ambassador for The Real Bread Campaign in 2019.

Refreshments will be available throughout each day, as well as buffet style lunches prepared by our team of chefs. All ingredients, equipment and recipes will be provided.

The School of Artisan Food is nestled in the heart of Sherwood Forest on The Welbeck Estate, Nottinghamshire, just a few minutes from the A1 and M1.

The School of Artisan Food makes a conscious effort to reduce waste and packaging. Students are encouraged to bring their own containers to transport their food home.

  • After a career in health and social care, spanning both clinical and management roles, primarily supporting people with mental ill health, Ian took the plunge in 2013 and re-trained as a real bread baker. The seeds of this radical life change were sown growing up, with a mum who made all of the families bread. Ian dabbled over the years making his own, with mixed results. A chance visit to a real bread bakery in Lyme Regis and a one day bread course got him thinking. Fast forward a few years and Ian bought his wife a patisserie course at The School of Artisan Food. She loved the place, casually mentioned there was a year long course in bread and said “why don’t you do it?” A few short months later and Ian was starting the Advanced Diploma at The School. At the end of an amazing year on the course, plans were ready and within three months Knead Good Bread Artisan Bakery was born. Knead Good Bread ran successfully for eight years, building a real bread community in its rural Leicestershire location. The bakery grew and evolved over that time operating weekly pop ups from “The Bread Bus” in different villages, the addition of a wholesale offering and latterly a subscription and delivery model. Ian has and continues to, spread the word with ‘breaducation’ initially in his bakery and then more widely in the community, online and at The School of Artisan Food, where he teaches a number of short courses and was a founding tutor on the Foundation Degree in Artisan Food Production. The bread journey Ian embarked on, has now come full circle as he has been employed at The School of Artisan Food as the Director of Resources.
