Course Details

We can’t promise the sun, but we can promise creative barbecue recipes that will impress friends and family at many a summer gathering to come.

Barbecue dishes are best cooked slowly over a constant heat. This results in tender dishes with a hint of smoke that creates that classic barbecue flavour. On this workshop we will teach you how to cook delicious summer dishes over charcoal, using wood and herbs for flavour and the best charcoal to use.  *Please note, this course is geared towards teaching you how to cook over charcoal and wood, not gas.

As well as learning cooking techniques, you will make marinades bursting with flavour that are a far cry from the traditional British BBQ staples. The course finishes with Robin demonstrating a hot tea smoking technique.

While the day’s menu may change with the seasons and availability of ingredients, you can expect to make dishes such as

  • Aromatic grilled chicken in a lettuce and herb wrap
  • Pork shoulder steaks with smoked apple sauce, garlic and rosemary butter, brioche
  • Sea bream with grilled little gem lettuce, lemon and harissa mayo
  • Merguez lamb with sweet and sour aubergine and yoghurt tahini
  • Bang bang cucumbers

We will cook and eat as we go but there may be leftovers to take home, so please bring Storage containers.
