Learn how to make one of the most satisfyingly rich breads in the world, brioche! Come and understand the different flours you can use, the importance of gluten and the different techniques used to give your brioche the light, soft, and buttery feeling that we all know and love.

Did you know that you can create all kinds of shapes and fillings? Come and learn how to make a variety of formations including a brioche Tressée, Bressane, Suisse, and pudding. Put your inner pastry chef to the test as you create a vanilla pastry cream and caramelised apple to fill your brioche, and a pecan crumble for the top. Walk away from the class with your freshly baked brioche in one hand and a brioche dough in the other, for you to fill your house with a buttery smell like no other!

 

We’ll make:

  • Brioche dough

  • Brioche Tressée, Bressane, and Suisse

  • Filled tartlet

  • Lyonnaise pudding 

  • Fillings including caramelized apple, pecan crumble and pastry cream

 

You’ll learn:

  • The importance of each ingredient of this enriched dough and the method of making it  

  • How to manipulate the dough and how to form the dough to your desired shapes

  • The ways to make nice fillings and garnishes for your baked items

  • How to handle sugar and how to make the perfect caramel
