Course Details

To begin, we will talk about chocolate: where its from, what it is (single origin, bean to bar etc.) and what we do with it while sampling chocolate during this segment. Then, into our commercial kitchen, you will try some molding and learn the basics of  ganache centres with up-close instruction and applied hands-on piping experience.

We will make the all-time favourite: caramel sea salt! We will also decorate a chocolate shoe (pick your style!) all the while, sampling more chocolates - fun!
