Course Details

Ever watched ‘The Great British Bake Off‘? Would you like to learn all there is to know about choux pastry? Well, this might be the course you’ve been waiting for!

Under the expert guidance of your tutor, you will learn how to make light choux pastry to create éclairs and a show-stopping croquembouche that will take you to the romantic streets of Paris.

 

Over the course of this two-day pastry class you will learn how to:

  • Learn how to plan your baking to create stunning choux pastry desserts
  • Make and pipe choux pastry
  • Make chocolate modelling paste and create hand moulded chocolate roses pastry cream (Crème Pâtissière) and choux pastry fillings; praline and chocolate
  • Make crème mousseline
  • How to fill eclairs and choux puffs for the Croquembouche tower
  • Work with liquid fondant (fondant pâtissière) to glaze and decorate eclairs
  • Assemble and build a mini Croquembouche – The tutor will give guidance on creating a wedding sized croquembouche tower as well

 

We will offer tips on how to:

  • Use the best equipment for optimum results
  • Pick the right ingredients for the recipe- Eg; why does French butter make the best pastry?
  • Best tips and techniques for storage and shelf life of pastry items

 

You will take home:

  • Chocolate Eclairs
  • A completed mini Croquembouche tower, with praline crème mousseline filled choux puffs

 

Additional details:

All ingredients and equipment, including transport boxes, for the course are provided. The recipes will be provided, including a list of equipment that has been used and where you can purchase these. You do not need to bring anything with you other than a notepad and pen. This pastry class is ideally suited for beginners as we will cover the basics of patisserie.
