In this class you learn how to shop, select, prepare and cook shellfish. The class starts with an in depth lesson on the different types of shellfish.
Discover how to cook yellow tail king fish ceviche style, sear Mooloolaba yellow fin tuna with traditional ponzu, grill Hervey Bay scallops, prawns and cuttlefish and cook Queensland reef fish ‘papillote’ style with piquillo sauce, all the while with a glass of beer or wine in hand.
Learn a variety of cooking methods using fresh Australian seafood with recipes from both the north and south of Thailand as you create a tantalising multi-course meal with a sweet finish.
In our classes we assume no knowledge, but have found that the more a student knows about cooking, the more they learn from our experienced chef presenters.
Learn how to mix and match spices to produce stunning results. If it is too hard for you to mix and match, in a hurry, we have sourced out the best spices and have packaged them for easy preparation.
