Louise Nason founded Melt Chocolates in 2005, with the guiding principle of the pursuit of health & happiness for her children, family, friends, and neighbours.
The name Melt was conceived over a blissful meal one balmy summer evening at the River Café in London. Louise, was searching for a word used in chocolate terminology as well as one having good associations, and the word melt does just that.
Chocolate, which melts at body temperature, should dissolve in your mouth in a silky mass, exploding with different flavours. A complex food with over 400 flavour notes, at its best it can provide an overwhelming taste sensation, lingering in your mouth long after the chocolate has melted away.
At worst it can be cloying, sickly and sweet but this is not what chocolate should be. Always hunt down the best. Bars should be of excellent quality, well made and stored at the right temperature and chocolates should be fresh.
Melt was created two years after her fourth child was born and almost became an extra member of the family. Its character is bright, excitable, spontaneous and it certainly has an interesting future.

All our recipes are designed in-house by the Melt chocolatiers. So come and see our kitchen in our store which is a hub of creative activity. The Melt team makes truffles on a daily basis to ensure you have delicious, fresh chocolates.
Melt’s unique approach is to have the kitchen in the shop, so you can see your chocolates being made right in front of you. Choose your chocolates and we can gift wrap them for you. Our store appeals to all your six senses: sight, touch, smell and of course taste. Watching chocolate being made is fascinating and the smell is intoxicating.
Chocolate is the only food that melts at body temperature, hence our name. You can only appreciate chocolate if you let it melt slowly in your mouth – so we encourage you to taste the best chocolate and let it linger in your mouth in a seductive way.
This one day course at Edinburgh New Town Cookery School is a must for chocolate lovers. We will show you how to make different chocolate puddings, desserts and treats whilst also learning about meringues and pastry.
