Course Details

In order to satisfy customers, you will make a variety of products, such as desserts with creams and fillings, desserts, petits fours, cakes and fine or commercial pastries, taking into account the specificities of the appropriate preparation and cooking processes. . 

You will also shape icings, make decorations, make chocolates and desserts while respecting the rules of hygiene and safety in the preparation, use and maintenance of the equipment.

 

Conditions of admission:

You must have a high school diploma (DES) or meet one of these profiles:

  • Be at least 16 years old by September 30 of the current school year and have successfully completed Secondary 4 credits in French, English and mathematics;
  • Have the study equivalencies recognized by the Ministry of Education and Higher Education;
  • Be at least 18 years old when starting the training and have the functional prerequisites prescribed by the Ministry of Education and Higher Education.

 

More specifically, you will have to acquire the following skills:

  • Choose the right tools and equipment;
  • Select raw materials according to recipes;
  • Make products based on crumbly, flaky, leavened and battered doughs;
  • Present the pastries respecting concepts of design and aesthetics;
  • Estimate the necessary number of products and plan the purchase of ingredients;
  • Welcoming customers, selling and marketing.
