This course will develop your advanced patisserie and confectionery techniques across chocolate, dough, pastries, sponges, hot and cold desserts and display pieces
This is a professional programme which allows students to work within the industry. You will be taught by a qualified and experienced pastry chef. Most of our students have gone on to work within the industry as a pastry chef or chef, or have been promoted within their current role, due to achieving this level of competence.
Leeds City College is one of the largest further education institutions in the country with more than 20,000 students and is one of the biggest providers of apprenticeships regionally.
The college is part of Luminate Education Group, which consists of Leeds City College, University Centre Leeds, Leeds Sixth Form College, Keighley College, Harrogate College and Leeds Conservatoire.
The college operates out of three main campuses: Printworks, Park Lane and Quarry Hill with smaller provisions in communities across the city. The new Quarry Hill Campus, based in the Cultural Quarter in Leeds, opened in September 2019.
As the day comes to a close, you’ll have the opportunity to savour all recipes covered during the class with a glass of wine, before taking home all four desserts to share (or not!)
In this pastry class, you will master the techniques needed to make and use perfect pastry every time. Called ‘a perfect pastry lesson’ by The Financial Times, our pastry class will take you from the basics to more advanced techniques.
The class will include recreating some of Julie’s stunning pastry designs from her new book.
