Since opening its doors in December 2009, the Edinburgh New Town Cookery School has been teaching classic and creative cookery in a professional but informal atmosphere.

The building is also suitable for PR events and product launches. The range of facilities on offer allows the school to host a broad spectrum of cookery courses and activities.

This study programme is for you if you have a true love and passion for baking.
The course will be run as practical sessions. You will learn the different patisserie techniques to produce the perfect desserts and pastries. You will be taught in a range of preparation, cooking and finishing techniques and produce a range of hot and cold desserts and pastry products.
In this class we make the best doughnuts you have ever tasted! We use a fermented brioche style dough that we talk through what the gluten does and how the butter in the dough effects the end result.
The class will include recreating some of Julie’s stunning pastry designs from her new book. There will be plenty of opportunity to practice with both free style and template designs onto tarts that you can take home at the end of the day.
