Course Details

Buttery, flakey puff pastry is such wonderful, and versatile product for everything from breakfast treats, to appetizers, to entrees and, of course, desserts. This class will focus on savory recipes that can be used as appetizers or even entrees if paired with a salad.

Students will utilize premade puff pastry while the chef will demonstrate the labor intensive procedure for making puff pastry from scratch. Student volunteers may particiate in the process as time permits. Once one learns to learn to handle puff pastry correctly, a world of possibilities will open up. Each team will execute one of the following recipes to share with the class.

 

  • Brie en croute with caramelized onions, dried fruits and nuts
  • Figs in a blanket with rosemary goat cheese, Marcone almonds and pomegranate reduction
  • Bacon and puff pastry wrapped Asparagus
  • Wellies (Beef Wellington Bites) with Port Demi-glace
  • Caramelized Pear and Gorgonzola Tart
  • Cheese and Pesto Twists
  • Los Angeles Branch
