Make viennoiserie baked items like they do at King Street Bakery, Mica Brasserie and Mica Express! In this class we will take you through the steps to achieve the same results from your own kitchen.

Not only will you have your own mouth-watering, flaky creations to take away to enjoy. You will also have laminated dough made by you to take home to practice your rolling and formation skills.

  • Pain au chocolate

  • Pain au raisin

  • Danish varieties

  • Nutella cruffin

  • Fillings including custards and creams  

 

You’ll learn

  • The complexity behind this beautiful dough and the lamination process

  • The methods behind rolling and forming a variety of viennoiserie products

  • To make the dough, incorporate the butter & laminate at home

  • The importance of proving and baking these delicate items

  • How to make fillings that complement each pastry

  • Garnishing and decoration skills
