You’ll learn techniques for shaping perfect little treats, and the different cooking methods for getting the best flavor from your dumplings as you make steamed dumplings with sai ua (Northern Thai pork sausage), lemongrass, lime leaf, and chilies and a lime aioli for dipping sauce; Colombian-style pipian (deep-fried dumplings) filled with spiced potato, and peanuts, and a smokey hot sauce; and sweet baked dumplings filled with chestnuts, black sesame, sticky rice, and honey.
