We’ll make:

  • Yellow tail kingfish ceviche style, served with a traditional Peruvian salad

  • Pepper spiced seared Mooloolaba yellow fin tuna, served with ponzu

  • Grilled Harvey Bay scallops, prawns & cuttlefish marinated Thai style served with Nam jim dressing and fresh sprouts

  • Qld reef fish cooked “En Papillote” style, served with a Spanish influenced sauce and vegetables

 

You’ll learn:

  • How to clean and present fresh seafood

  • How to incorporate flavour profiles from multiple world cuisines

  • Different methods of cooking seafood including ceviche, grilling, and baking
