This training scheme is perfectly suited for anyone who desires a profession in whole foods cookery as well as beginners exploring alternative ways of cooking. It will exclude the use of animal products, processed and refined foods.
We will cover the production of pastries and breads, basic pickling and fermentation technics and the use of a variety of methods of cookery. It will teach the specific use of different types of seaweeds, grains, leaves and plant-based proteins as well as nut milks.
This is a comprehensive course focusing on satisfying, delicious and nutritious cuisines from across the world.

Scholars Training Restaurant and On The Terrace Café is an integral part of the Culinary Arts and Restaurant programmes at EIT. Scholars is open to the public for lunches and dinners during the teaching semester providing cooking and waiting students with practical experience in a real and professional setting.
