Ice cream is an art and a science at the same time. To obtain high-quality ice cream that is both tasty and has the perfect texture, you must master the production steps, but also measure the ingredients correctly.
Spend an evening with 49 Below's founder Dan as he walks you through the history of ice cream and demonstrates how to make your own dairy base at home.
This intensive course provides participants with knowledge of the ingredients, processing and quality features of ice cream. Various sessions examine the technical points of ice cream manufacturing, with an emphasis on the quality of the finished product.
The Italian gelato culture has changed significantly over the years. Guided by our experienced chefs, learn the modern adaptations of traditional favourites. Students will explore custards and infusions to master challenging recipes and to achieve the perfect texture.
