She’ll show you the secret of ganache making and all the cool stuff you can do with it! Love chocolate covered strawberries?? Wait’ll you taste how great they are dipped in fresh chocolate ganache!. Next up, you’ll hand roll and finish a dozen truffles to enjoy.
All the while, Roni-Sue is sharing her tips and tricks for making your own custom flavored chocolate ganache fillings and upping your sweets game in general.

Following in the entrepreneurial footsteps of her mother, Rhonda Kave (left) opened Roni-Sue’s in 2007, claiming her namesake sign from the clothing store her mother owned to carry on the legacy in a new way.Sharon Hoahing (right) is the general manager. Together this two-woman team makes, bakes, and operates Roni-Sue’s Chocolates.
Roni-Sue is a co-founder in Belize based MOHO Chocolate Company where chocolate is made by local artisans using organic Mayan cacao. At Roni-Sue’s we use these same organic cacao nibs from Belize to make our house made dark chocolate. (Shhhh, it’s the secret to our critically acclaimed hot chocolate) as well as the delicious, fruity base for many of our rich dark chocolate ganache truffles.
Learn how the bean to bar process works (and make a batch of your own chocolate, from cacao beans to bar) and create perfect craft chocolate and candy bars. A complete education in the science and history of chocolate making will be covered, as well as how to create a craft chocolate operation.
Learn to make decadent chocolate truffles! In class we will make several flavors of ganache fillings and learn to temper chocolate. Students will make truffles in candy molds, hand enrobed truffles and cocoa coated truffles.
Get your tourist visas ready, because in this class you’ll taste a selection of single-origin and inclusion chocolate bars highlighting the breadth of flavor possibilities inherent in cacao from around the world and made by some of the world’s top craft chocolate makers!
