Dia de los Muertos is one of the most important days of the year in Mexico - a day to pay respects to ancestors and celebrate life. And of course, all celebrations involve the cooking and sharing of food. On this day course we will explore the cuisine of Mexico and use a wide variety of fresh and dried chillies.
If you love turning up the heat, this course is for you - we will be using lots of varieties of chillies from the smoky dried Ancho, Poblano and Chipotle, to fresh Jalapeno and Habaneros. All our chillies are sourced from our local chilli growers.
This is not 'Tex-Mex' - we will use ingredients such as masa harina, corn husks and beans to create delicious Mexican dishes
Recipes made on the day will include things such as:
Pan de Muertos - a traditional Day of the Dead bread with spices
Sopa de Tortilla
Sweet Potato Tamales with Chipotle en Adobo
Pico de Gallo
Frijoles Refritos
Arroz Mexicana
Salsa Cruda
Churros with Hot Chocolate Sauce
The day will include lots of hands on cookery as well as some demonstrations.
The course ends with a sit down meal around our dining table to enjoy the food made. Please bring a plastic container if you wish to take some of your food home with you. You will leave with a full recipe pack and glossary of ingredients so you can recreate the dishes at home.
