Authentic dishes which celebrate the variety and intense flavours of Mexican cuisine in a new cooking class – dining event. We go beyond tacos to explore vegan Mexican cuisine, creating rich, varied, balanced and nutritious dishes from raw ingredients.
Emily starts by demonstrating the stages of a Mole de Calabaza. Everyone helps… its a collaborative experience which you can enjoy while indulging in a little sangrita, a Mexican apertif. In Mexican cuisine a mole is a sauce – in this case a sauce of tomato, onion, ancho chillies, pumpkin seeds, basil and coriander which is poured over the baked calabaza (Mexican for pumpkin).
While the Calabaza is in the oven, you can help to make the charred tomato salsa (or simply watch), then enjoy as a starter. We will make corn tortillas from the raw ingredients to accompany the main dish, Mole de Calabaza. For a desert we have home-made vegan dark chocolate & coffee mousse. Everyone is welcome!
