You will find tortilla perched atop the bar of most every tapas or pintxos establishment in Spain, and it is no secret why—the ever-popular dish is so much more than the sum of its parts. Luscious caramelized onions, earthy olive oil poached potatoes and tender eggs unite with some kind of alchemy to make every bite unforgettable.
Tortilla needs no adornment at all, though serving it with Frances’ Simplified Romesco is an excellent idea. (A crisp glass of white wine wouldn’t hurt, either, for the grown ups).
In 90 minutes, you’ll have dinner on the table and tortilla and romesco sauce making skills in your knowledge base. This multi-purpose dish makes an excellent breakfast, lunch or dinner, and you can slice it up (see class photo) for appetizers, too. We heartily recommended inviting teens to cook along, as this inexpensive, nutritious dish is a great one to learn before departing home!

While we can’t guarentee you’ll learn how to roll your R’s, you’ll leave class with some tantalizing tapas recipes + a great appreciation for the simple yet robust techniques behind traditional Spanish cooking.
