Course Details

Prerequisite: having completed the “Sushi 101” training.

  • Making of maki, hosomaki and gunkan in soy leaf;
  • Making more elaborate makis and nigiris;
  • Sushi pizza and homemade onion confit;
  • Classic red tuna tataki and its marinade;
  • Butterfish seared in a flame;
  • Tempura vegetables;
  • Making the Ponzu sauce.

 

Note:

  • All the taught recipes will be given to you on paper at the start of the course.
  • In addition, you will leave with your culinary exploits at the end of each class.
