Course Details

Join us in this six-week program as we take a global look at a variety of cuisines that have taken the world by storm. Hosted by Chef Andrew Schmidt, the Around the World Series will educate students on individual cultures, their culinary staples, and the context behind it all! This series is open to all skill-levels, ideal for those who want to become more worldly when it comes to international cuisine.

Each week follows the same structure: students will listen to the chef instructor’s lecture over the weekly topics before heading into the kitchen to make the respective dishes themselves. Once the food is prepared and plated, everyone gets to enjoy a family-style meal of what they’ve just made with a complimentary glass of wine.

 

Week 1 – France

  • Gougères (Savory Pâte à Choux Puffs)

  • French Onion Soup

  • Flank Steak with Shallot and Red Wine Vinegar Sauce

  • Pommes Purée (Creamy Mashed Potatoes)

  • Glazed Herbed Carrots

  • Cherry Claufoutis

 

Week 2 – East Asia

  • Vietnamese Summer Rolls with Peanut Dipping Sauce 

  • Beef Bulgogi 

  • Japanese Style Fried Rice 

  • Chinese Style Stir Fried Vegetable Medley 

  • Black Sticky Rice with Mango Coconut Semifreddo 

 

Week 3 – Italy

  • Ricotta, Bacon, and Roasted Tomato Bruschetta with Honey Balsamic Glaze 

  • Minestrone Soup with Parmesan Crisp 

  • Pan Seared Chicken Breast and Fettuccine all’Amatriciana 

  • Lemon Mascarpone Mousse with Lady Fingers 

 

Week 4 – Latin America

  • Homemade Tortilla Chips with Mango Corn Salsa 

  • Grilled Skirt Steak with Chimichurri Sauce 

  • Spanish Style Rice with Black Beans 

  • Tres Leches Cake 

 

Week 5 – India

  • Fried Potato Bondas Cucumber Raita Dipping Sauce

  • Mango Chutney

  • Chicken Tikka Masala

  • Basmati Rice Pilaf

  • Saag Paneer

  • Grilled Naan

  • Mango Lassi

 

Week 6 – Germany

  • Krautstrudel

  • Braised Red Cabbage

  • German Potato Salad

  • Jagerschnitzel with Mushroom Demi Glace
