Asian street food offers not just spice but also salty, sweet, sour and bitter flavours that come together in perfectly balanced dishes. Testament to the delicious food, we've been running this flavour-packed class for 20 years now and it is still one of our most popular.
You will learn how to use coriander, lemon grass, kaffir lime leaves, galangal, garlic, tamarind and chillies. How to whizz up fresh sambals, marinades and dips without the ubiquitous fish sauce. How to make tofu taste really delicious. We will also show you how to use ingredients such as green papaya, black rice and mung beans and where to source them.
The course is hands on with some demonstration. The menu will include street food such as:
Pad Thai
Spicy Peanut Satay
Crispy Sesame Tofu
Aubergine Rendang Curry
Garlic Fried Mung Beans
Spicy Sambals, Marinades and Dipping Sauces
Balinese Black Rice Pudding with Chilli Mango
The day will cover knife skills, how to stir-fry and steam and lots of chefs tips and techniques.
The course ends with a sit-down meal around our dining table to enjoy the food made. Please bring a plastic container if you wish to take some of your food home with you. You will leave with a full recipe pack so you can recreate the dishes at home.
