This course explores approaches for creating flavor in cooking vegetables. My goal is to give the home cook a window into the world of fresh local produce and innovative cooking approaches. This two session course will focus on:

  • Your Pantry, the Farmer's Market and Cooking Techniques for Creating Flavor

  • Cooking together delicious vegetable dishes, such as Roast Sweet Potatoes with Tomato, Lime and Cardamom; Spicy Italian Broccoli and Cauliflower; Swiss Chard with Lemon Yogurt Sauce and Pine Nuts: and a Caramelized Garlic Tart
