This class is taught by indigenous chef Chris Jordan, a Koori man born in Maclean, New South Wales on traditional Bunjalung land.

Chris uses native ingredients and ancient techniques to make food that just doesn’t just taste good but also acknowledges, educates and celebrates the unique culture and natural resources Australia has to offer.

This class features cooking on coals and will start with an introduction to native ingredients and their nutritional information, traditional uses and where it can serve as a substitute.

 

The menu includes;

  • Oyster cooked in coals with radish leaf & native thyme oil
  • Wattle seed damper with Native Dukkah
  • Reef fish Nummus
  • Charred BBQ kangaroo loin with Saltbush & Seaweed Spice Butter
  • Salt baked beetroot & sea vegetables
  • Lemon myrtle honey biscuit, cinnamon myrtle meringue, strawberry gum berries & Davidson plum coconut yogurt
