Take a culinary journey back through time with this informative course combining food history with practical sugar work led by food historian, broadcaster and writer Ivan Day. This one-day course will give you the opportunity to practise long-forgotten period sugar work techniques and learn more about the history of food.
This course will give you some experience of reconstructing historical confectionery items using original equipment, materials and techniques that are now more or less extinct. Ivan has the finest collection of period confectioner’s equipment in the UK.
From Jacobean sugar plate playing cards to Georgian sugar seashells to Regency cake decorations you will learn about some remarkable lost skills from Britain’s leading expert.
No prior sugar work experience is necessary; just enthusiasm and a willingness to work alongside other food lovers.
At the School of Artisan Food we make a conscious effort to reduce waste and packaging, so encourage you to bring your own containers to transport your pies home. Refreshments will be available throughout the day, as well as lunch, freshly prepared by our in-house hospitality team.
