Course Details

Chef Damian, widely regarded as a championer of local heritage cuisine has burning passion to re-introduce and pass down forgotten recipes to preserve Singapore's culinary legacy for the future. 

In this brand new series, he will be focusing on sharing the dishes across all ethnicities, making every component from scratch, using lesser known ingredients like how it used to be in our grandparents' generation. 

 

Menu

 Aberjaw 

  • A subtly spicy Eurasian classic dish of pork-ribs cooked in a piquant spice blend which includes fermented soybeans (tau cheo), turmeric, garlic and bottle gourd. Cooked in an intensely flavorful broth, this meat stew has its own unique slant like no other. Chef Damian resurrected this near-extinct Eurasian dish from his taste memory so that we can all now get to know this dish. 

 

Tamarind Squid

  • This is an Eurasian fusion dish combining Malay and Eurasian ingredients. Using the freshest baby squids marinated with a good reliable source of tamarind (assam), then stir fried with a concoction of aromatics, this straightforward yet delicious go-to dish is one for your dinner table definitely. 

 

Frikkerdels

  • A Sri Lankan dutch influenced spicy beef meatballs that is packed with aromatic spices. A fantastic appetiser and snack that will go so well with a saucy main dish.
