  • The technique of preparing traditional Malay curry paste from scratch. 
  • Learn how to prepare and cook a roti dough (and stretch it by hand) 
  • Classic wok and stir fry techniques
  • Students will learn how to cook with authentic Malaysian ingredients and make restaurant-standard dishes to wow your guests

Recipes

  • Chicken Nyonya Kapitan Curry - Traditional and authentic curry with the paste made from lemongrass, galangal, chillies, turmeric and aromatic spices. Infused with kaffir lime leaves and coconut.
  • Roti Canai - Malaysian famous breakfast. A flat and flaky bread served with curry dip. 
  • Banana Blossom Curry - Pieces of banana blossom, cherry tomatoes and okras in a rich curry infused with fennel, coriander, fenugreek, tamarind and curry leaves. 
  • Char Kuey Teow | Prawn wok-fried Penang Noodles - This famous noodle dish is from Penang and fried with soy sauce, chilli paste and sesame oil.  

What you can take home:

  • There is a tasting session after each class where you can sample the tutor's version of each dish. You will have lunch and then take home a selection of dishes you made in the class.
