With a concentration on provenance and understanding the food process from end to end, you’ll not only be able to craft your own pickles and kimchi from scratch, but also develop an understanding of the process, and taste the difference in quality of hand-crafted food for yourself.
From sandwiches and vegetarian plates, to meat dishes and BBQ feasts, a tangy pickle or kimchi is always guaranteed to heighten flavour and bring your plate of food to life.
They are popular for adding sharp, piquant flavours and freshness to a dish, as well as texture as the vegetables keep their al dente crunch. They can be enjoyed as a standalone snack or be used to cut through rich elements in a dish. Not only are pickled foods and kimchi widely sought after for their unique flavour, they are also well recognised as being beneficial for our gut health.
The evening is made up of a series of demonstrations and practical cooking exercises, and you will be able to take home with you everything you make yourself on the day. This class also includes a light snack.

Class structure:
Cooking with your classmates is an integral part of your Leiths experience. You will cook some of your recipes in pairs, and some independently – whatever the ratio, there is always more than enough food, and often food to take home too.
Your day will comprise of a mixture of hands on cookery and demonstrations performed by the chef who is running the session. The exact format will vary from class to class depending on the style of cuisine and, in the case of visiting chefs, their individual teaching style.
This class will include a light lunch and refreshments.
