Until a few years ago relatively little was known about Korean food and culture in comparison with its closest neighbouring countries- China and Japan. However in recent times there has been an explosion of interest in Korean cooking and ingredients. Where once the mention of kimchi would raise a puzzled brow, now the preserved and fermented foods that lie at the heart of Korean cookery have taken the culinary world by storm.
Korean food has evolved through centuries of social and political change and takes influences from China, Japan and even America, whilst retaining its own unique identity.
