Under the spotlight for this course is Cantonese Cuisine. Also called Yue cuisine or Guangdong cuisine, Cantonese cuisine is one of the eight major cuisines with a long history of about 2,000 years. The signature of Cantonese dishes aim to bring out the freshness of ingredients, accentuating their natural flavours.

Asian Culinary Institute (ACI) Singapore is a joint collaboration between SkillsFuture Singapore (SSG) (Previously known as WDA) and Nanyang Polytechnic (NYP). We are appointed by SSG to be the Anchor Provider for Food & Beverage Services industry. ACI is also the Programme Manager for the SkillsFuture Earn and Learn Programme (Food Services).

You are invited to choose a theme before the event: French, Japanese, Italian are always popular. We will provide the ingredients, from fresh meat to vegetables, sauces and oils, herbs and spices - everything you might need to whip up a delicious meal.
If there is one thing we do well in Asia, it has to be snacking. In between meals, we always find space for both sweet and savoury snacks.
The South Asian subcontinent has a highly evolved culinary history which stretches back 5,000 years.
