In this hands-on class, you will learn invaluable tips about selecting seafood and preparing delicious dishes at home. You'll explore topics such as freshness indicators, handling and storage, fabrication techniques, cooking methods, sustainability, and nutrition. And using the information discussed in class as your guide, you will then prepare a variety of shellfish and finfish.
Please note that all fish and seafood items fabricated in class will be available for you to take home. Portions will be vacuum packaged using the CIA's industry-style vacuum system. Ice packs will be provided for travel. Please bring a large-sized cooler for transport. A cooler is required.

Learning how to fillet a fish is easier that you think. In this class we will give you basic information and simple steps on how to clean and fillet a fish properly.
In this class you will prepare delicious fish recipes, with authentic spices, fresh produce, and simple hands on instruction by Carmela. The class will be followed by enjoying your meal with your class mates.
This courses begins with the basics of type, grade, and cuts of these main dish items. Discussions include: roasting, baking, broiling, frying, boiling, sauté, and braising. Recipes, seasoning, and serving are also covered.
