This 4 week plant-based cooking course will cover a range of world cookery cuisines, including Indian, Thai, Chinese and of course a fun baking class!

Techniques you will learn:

 

A Taste of Northern India

  • Our Resident Chef will demonstrate how to cook three authentic North Indian dishes.
  • Create your own curry using butternut squash
  • Learn about spices and how to toast and temper them to make a Tarka to season your dhal
  • Master a quick and easy method to unlock the secrets of cooking basmati rice pilaff with whole spices.

Plant-based Thai

  • Learn how to make curry pastes from scratch
  • Learn how to use and get the most out of spices to develop a fuller flavour for your dishes
  • Develop your knife skills to prepare Penang Aubergine and sweet potato curry.
  • Learn the techniques of stir frying cooking a classic tofu pad prik
  • Learn how to prepare and cook coconut jasmine rice

Plant-based Chinese

  • Learn how to prepare and cook tofu
  • Master the skills of stir fried rice
  • Learn how to prepare a vegetable filling and expertly shape gyoza dumplings and tip on making a tasty dipping sauce
  • Basic knife skills for use in your everyday cooking
  • Learn about Chinese flavourings which you can apply to other dishes
  • Learn how to stir fry cooking a classic kung po tofu dish

Plant-based baking

  • Learn the fundamental knowledge of creating plant-based biscuits and cookies. You will be shown how different vegetable fats can impact the shape, flavour and texture of your finished bakes
  • Hint and tips for creating plant-based cakes that boast moisture and flavour
  • How to employ various seasonal fruits and vegetables in baking, and how to effectively substitute eggs and butter in a baking recipe
  • How to make a crisp-textured pastry using plant-based fats

 

Full recipes including ingredients and methods are provided for you to take home to add to your repertoire so you can keep on cooking them time and time again.
