You’re invited to get saucy with the Chefs at Cook Street! This two-class course will cover all of the techniques behind the Mother Sauces and their derivatives, and the various applications of the sauces. You’ll also learn a variety of modern and dessert sauces and how to use them to complement a dish.
Learn to build an entire dish around a base sauce as well as use sauces as accoutrements to a meal. Enjoy several dishes utilizing your new-found talents, with wines to pair! Each day you will study a variety of cooking methods and use them to create a menu. Wines will be chosen to pair with your meal!

Espagnole
Sauce Tomate

Gastrique
Emulsions: Temporary, Semi-Permanent and Permanent

An American Chef course is offered by The Chef Apprentice School of the Arts. Our experience is rooted in the belief that you should never have to go into soul-crushing debt and learn in crowded classrooms with no access to the industry you want to work in upon graduation.

The ACE Professional Cooking Program includes 30 in-class sessions, field trips, and a complete school uniform (monogrammed chef’s coat, chef’s pants, skull cap & apron). A Grand Diploma is awarded to those who complete all three 10-week segments, and requirements and pass the final project.
