Course Details

Let us show you how to choose the freshest fish, and give you the knowledge, skills and confidence to prepare and cook fish in your own kitchen.

We will teach you how to clean, descale, fillet, and pin-bone fish, as well as use a variety of methods such as baking, braising, poaching, and pan-frying to cook your fish to perfection.  You will also learn how to make fresh fish stock and use it to make delicious accompanying sauces.

While the day’s menu may change with the seasons and availability of ingredients, you can expect to make dishes such as:

  • Braised trout with mushrooms and white wine
  • Poached salmon with tomato, lemon & herb dressing
  • Salmon en papillote
  • Baked cod with a Parmesan crust and tomato fondue
  • Pan-fried sea bass with soy, ginger and chili

At lunch, we’ll stop to eat what we have made in the morning and share a glass of wine while we chat with our fellow foodies on the course. There may be leftovers to take home, so please bring Storage containers.
