Vekonda Luangaphay is the founder of The Lao Project, which is a collection of narrative portraits that highlight the life journey of Lao Americans for future Lao American children. The long-term project provides a platform for Lao representation in mainstream media with a goal to connect Lao communities across the nation and to empower each other through space and time with narrative storytelling.

In honor of AAPIH month, The Lao Project also aims to bring America’s attention to authentic Lao cuisine, making it mainstream by food demos, dinner parties, or cooking classes. The Nibble Kichen is proud to showcase The Lao Food Show which brings Lao history and food together. Come cook the country's most culturally popular dish called Laap.

Laap is a delicious savory and herbaceous meat salad that is slightly spicy, yet refreshing from the fresh dill, spring onions, and cilantro, all tossed in a citrusy umami vinaigrette. It will be served with a side of veggies and sticky rice. It’s going to be as authentic as it gets, that means fermented fish sauce called padak, and extremely fragrant herbs that will make your nose zing.
