Every student prepares three different varieties of petite pies from scratch to take home (varieties change with the season); learn baking tips from the "Pie Guy” including how to prepare the perfect pie dough, crust techniques, ingredient recommendations, and so much more. The two-hour class ends with a sample tasting of several varieties of A la Mode Pies. Recipes are included.

Pie-Making is an Art Form
Growing up, my favorite thing for lunch was a frosted fruit pie. It was a treat packed with hidden sentiment as my Mom would only include one in my sack lunch on special occasions – like my birthday or the first day of school. She was an accomplished cook, so it meant a lot considering how much she prided herself on making things from scratch.
Most nights, I would watch her in the kitchen preparing a myriad of dishes with a Midas touch. Mom taught me that patience, technique, and invention in the kitchen are often rewarded with wide eyes and happy taste buds. As an adult, my curiosity and creative skills outside of the kitchen translated into a successful career as a television news reporter and as a director of public relations.
But, like my Mother, my true passion has always been deeply rooted in the kitchen. Today, my vision for A la Mode Pies is not just to re-create Mom’s recipes, but reinvent them using imagination and high-quality ingredients. We create pies and tarts that look as good as they taste – no sprinkles, frosting, or grocery store gimmicks.

In this class you will learn the basics of icing and the different types of icings used. You will get a buttercream icing recipe and also make the buttercream so that you will learn the perfect consistency to ice the cake. We will be working on real cake.
Explore proper techniques and methods for professional pastry, baking and contemporary desserts in our Pastry & Baking Arts program.
We’ll teach you how to make a soft, fluffy white bread, cheddar biscuits and scones – flavors will vary – blueberry, ginger, orange, etc. Whatever we’re in the mood for that day!
French Apple Cake class is offered by Whipped Bakery Cafe. It’s apple season and this apple and custard cake is sure to please.
Savory European Tartes, Pasties, Galette & Dumplings class is offered by Chef Joe's Culinary Salon. A creative and lavish bounty of savory European tartes, pasties, dumplings and galettes. Yum! Great For Parties!
