This hands-on cooking camp highlights old-world preservation techniques like sourdough, fermentation, and making jam, butter and cheese, all from scratch. Ditch all the packaged products and learn how simple and satisfying it is to cook from scratch.
Students will learn to prepare the foods themselves, learn proper knife use, measuring and mixing, as well as different methods of cooking and baking in this fun and gratifying camp. On the last day students will work with Chef Shawna to design the final menu.
Menu
Day 1: Intro to Fermentation - Start Baek-kimchi (vegan white-kimchi), Zucchini-corn fritters with herbed-yogurt sauce
Day 2: Intro to Sourdough - Start sourdough focaccia, Sourdough discard drop biscuits (sweet and savory), Hand-shaken butter
Day 3: Intro to Cheesemaking - Shape and bake focaccia, Fresh mozzarella, Cream cheese from Scratch, Caprese salad
Day 4: Intro to preservation - Quick pickles using seasonal vegetables, Seasonal fruit jam with water-bath canning demo, Jam and cream cheese turnovers
Day 5: Use what we made! - Bibimbap (rice bowls with kimchi, quick-pickles, and fried egg), Quick sourdough green onion pancakes
